Halibut Skewers!
Not sure if I ever shared this with you guys before but when I went to Alaska in 2007, this is the recipe I used for the majority of my Halibut and it was the BEST I have ever had.
2 lbs. Halibut Fillets
1 1/2 lbs. Large Shrimp, peeled/cleaned
4 tbsp. Olive Oil
4 tbsp. Soy Sauce
3 tbsp. Lime Juice
1 tbsp. Orange Juice
Fresh-Frozen Halibut
Recipe Preparation:
Remove skin and bones (if any) from halibut fillets. Cut fillets into 1 inch cubes and store in a shallow bowl. In a small bowl combine oil, soy sauce, lime juice and orange juice; pour over cubes of fish. Let fish marinate for about 30 minutes at room temperature. Strain fish, reserving marinade for later use. Fill four skewers with alternating cubes of fish and shrimp. Place skewers in center of your grill and cook for 5-8 minutes, turning once (brush with marinade), or until fish flakes easily with a fork. Serve hot.
