I was thinking tostadas, but the rostissiere style looks good

go to a nearest lake and catch a dodo
that's easy since the bird must be looking at his reflection
and not catching any fish at all
take all the feathers down, most are bold on top
so a few feathers on the side and that's it
the butt is also bold,marinate in soy sauce
stick a rod trought the tail
and out and turn slow in low flames

I found this "SECRET" recipe in an acient Mid Eastern Cook Book. An elderly woman in Lake Elisnore saw our plight and had mercy on our cooking efforts and PM'ed me with it.

The DoDo is a plump tough bird. First it must have all the Fat Rendered. Place DoDo bird in a pressurijzed steam cooker for 1 week. After which it will be 75% lighter from having all the fat rendered. Be sure to keep the DoDo bird hot when removing from the rendering pot because if it gets cold the fat will set up solid and the DoDo bird will get stuck in the pot. After removing the hot DoDo bird it must be tenderized, place it in a slow cooker with Sulferic Acid, Hydrolic Fluid and 8 cloves of garlic for no less then 72 hours. By this time the DoDo Bird will be cooked into submission at which point it can be removed, salted to taste and fed to your mother in law.

This reciepe is no longer a "SECRET".

I'm thinking "Stuffed Dodo" Hawaiian B-Que Pit Style!

Because that Ol Dodo Bird is as tough as an alligators hide, you gotta bury dat sucker in a deep pit cover it up with banana leafs, dirt, cement, a blow-up doll and wait a century or two so it will stew in it's own toxic juices!

But before you put him in the pit. U gotta heat up some large river rocks with a bonfire for about 6 hours to get the rocks really hot! Place a metal slab on the rocks place the Dodo Bird on the slab cover Bird with banana leafs then throw about a ton, no two tons of dirt on it!

You marinate the dodo bird with Cheese cloth, butter, tomatos, garlic, onions, serrano chiles, red wine & put an apple in his mouth!

Turns out great! I won't eat it, but u could!

Since Dodo are fat and slow they are easy to catch, or at least they used to be.

Dodo can be substituted instead of whole hog.

Some of you might prefer Dodo hole, right guys?




FILIPINO BOX SPRING HOG

Crispy crunchy skin, meltingly tender and flavorful flesh! Need I say more.

NOTE: If you can't muster the whole hog, you could do it with any skin-on portion of a pig or Dodo.

Ingredients:
· Hog, if you can find one a huge Dodo can be substituted in this recipe.
· Ginger Ale Soda
· Adobo Spice
· Garlic
· A box spring (from a bed)
· The removed hood of a car

Method:
· Dig a deep pit.
· Line it with stones and start a big ### fire inside it.
· At this point toss your box spring in alowe all cloth to burn off it.
· Make a paste of spic spice and ginger ale.
· Now make little slits all over your pig/Dodo and stuff cloves of garlic in each.
· Rub piggy down with paste.
· Now throw piggy/Dodo on top of box spring.
· Cover hole loosely with the car hood.
· Let it roast for 8-16 hours depending on its size.
· Enjoy face first.

I got my food dish that Taco handing it on the table. I looked at the food....aaahhh Dodo's face and burrito stuffs cover on his body. I told Taco no no, replace the right regular chicken mucho burrito.
