Well sometimes is depends on the brand of the materials you are looking at. Some are cheap, and do not hold up, while some can be very strong and durrable. I have not had problems with any materials that I have bought in the lower price scale. Just thread is the only thing that has not held up. I bought some thread for 97 cents at sportsmans warehouse, and it breaks very easily.
As for the more priced materials, I would either say that they have more material in the package, or they are just charging that much because they can. People will buy it. It might just be the materials you are looking at. Some can be very expensive, especially some saddle hackles. If I was you I would try out the cheaper materials and if they dont hold up, spend money on the more expensive materials. In the end you will appreciate what you have done. Tying flies if much more price consuming then buying flies every time you need them. You can tie one flie for like 45 cents, but when you buy them it can be from lik 1.00-10.00 sometimes. The more expensive materials you shouldnt have any problems with, but why not try out the cheaper stuff..? I would go with them first.
