good question, I talked to folks a few months ago about the best way to cook perch and they all recommended pan-frying it. Perch are extremely moist fish, so much so, they come out like mush if you bake em. frying seems like the best method to loose the moisture from the meat.

I've also been told that the best way to eat grunions is to oil fry them like frys. Chicken fries, animals fries, grunions frys.......mm,mm,mm I'm lovin it.

get a bowl and a plate put a beaten egg in the bowl and a splash of milk or water with it beat for 30 seconds, now the plate put some bread crumbs in it,either buy some om crush somthing up to make em,crackers ,unsweetened cereal, dip fillets in egg bowl let drip 5 seconds.pack on the crumbs thourouly and fry on each side ,id say for a perch about 2.5 minutes each side, you may season bread crumbs, next time you at a market ask for the Asian section and buy some "Panko" bread crumbs there really great.

Try steaming them, a little ginger, salt, scallions. My gf's family is chinese and thats how they cook all seafood, and it always tastes amazing. Give it a try, Im hoping Ill be able to try after this weekend.
