Walnut encrusted mahi mahi

Walnut encrusted mahi mahi

4 nice portions of mahi mahi (about a 1/4 lb. each)
1C finely chopped walnuts
1/3C unseasoned dried bread crumbs
1 egg beaten with 1/2 cup water
1/2tsp. salt
1/2tsp. pepper
flour for dredging
2Tbls margarine
Mix dry ingredients
Heat margarine in a large skillet
Dredge fish portions in the flour, knocking of the excess, dip in the eggwash then in the crumb mixture, packing it on and pressing it into the fish.
Saute gently until nicely browned on both sides and the fish flakes easily.
Serves 4
