everytime i check this area out it is my last recipes, im not sure if my comp. is not updating in this section ,or if its not a popular area of interest? i always see people checking it out.anyway igot to thinkin bout another awesome recipe ill post it .

I used to make this often ,i get about ahalf pound of any fish ive just caught and kinda mince it up little cat food size pieces then of course i add a healthy amount of lemons about 5 juicy ones the fish turns a beige color when its done in about ten mins.mix around, drain out the lemon juice,or you may want to leave a bit, to this i add some onions usually the red ones or a good quality one and alot of celantro (if you like it, i really do in about everything) youll also need a good meaty tomato i dont like the pulpy ones for this,the next thing is a good seasoning of your choice,like garlic salt or lemon pepper or salt and pepper,but add it in carfully not to over power it,i also add in some bay shrimp there inexpensive and make it more interesting.to this you must add about 3 tbl. spoons of olive oil or any oil,the oil draws out the flavors of all the ingrediants,(this will by the way apply to any salsa you ever make too).too bring these ingrediants all together as a dip i add sour creme,or ive done half ketchup and half cocktail sauce or catsup with horse radish,i like the sour cream a bit more.a goor tortilla chip is in order fot this appatizer,the first one you make will be good or really good but i have never made this for anyone or took it to a get together without hearing about it all nite!

i tried making ceviche with dorado but it came out really bitter, the recepie i was using was pretty simple. it was, lime juice, tomatoes, onions some green stuff celantro (i think) and hot sauce. have you experienced the bitter taste i'm talking about?

Maybe you got the oil from the skin of the lime in it.

never had the bitter,was it frozen or fresh ?the dorado that is? well any ways try it again,use store lemons if you didnt last time
