Where in Oregon will you be staying? I have lived here for about 15 years and fished a ton of spots. I have caught a ton of rainbow trout, and many other species of trout. We have some bass fishing, trout, salmon, steelhead, panfish, walleye, sturgeon....and so on. Here are some places I would reccomend.
-Henry Hagg Lake
-Davis Lake
-East Lake
-Paulina Lake
-Crooked River
-Metolius River
-Deschutes River
-Fall River
-Clackamas River
Those are some very good fishing rivers. Will you be bank fishing or fishing from a boat some times? East Lake has some monster brown trout, that a lot of people catch while trolling and jigging. Same with Paulina Lake. Hagg lake has many species of fish, one includes small/largemouth bass. Some are very big. Crooked River has 5,000 rainbow trout per square mile. Metolius River has many species of trout, one being bull trout which are very big in the metolius. Right now some salmon and steelhead are in the clackamas river. The Deschutes River is a fantastic river that I would really reccomend. A lot of nice niced trout and steelhead!

Well hagg lake is in the west, so is the clackamas river. They both have some good fishing. There is not to much places with large trout in the western part of oregon, but you can catch a lot of smaller fish. The wilson river has some good trout fishing. Maybe sauvie island in portland. They have carp, catfish, trout, sturgeon...

I lived there most of my life, but moved to alaska about 7 months ago. I visit here in the summer, but I leave to go back on the 1st of august. I will do some research for you though on some good areas.

Also the rogue river, and the mckenzie river are very good fisheries.

My 2 Aunts and Uncles live up there, and I go up there every year to fish. It has some great fishing! Try the umpqua river: North Umpqua is good for salmon. Middle is good for small mouth bass. Lower is good for sturgeon.
