Smoked fish recipe

I found a somewhat elaborate smoked fish recipe for halibut/salmon. If it turns out good I'll share it with everyone -- if I wreck 20lbs of halibut I'll be pissed. Looks good so I'll give it a try tomorrow in the smoker.

I have hickory and mesquite -- just got done mixing the brine and the fish are soaking, I'll start smoking in the morning. Actually I have some Jack Daniels Oak chips. They take the barrels they make Jack Daniels in and chop them up for smoking wood. I hate Jack Daniels the whiskey --- but the smell and flavor from the oak chips is awesome. I've got 2 different batches going, one is a store bought brine mix from Riverton, Wyoming (where my wife is from) and the second cost me about 20 bucks in the grocery store to get all the ingredients to mix together but looks good. I even stuck my finger in it and tasted the brine mix and it wasn't bad. If it works I'll post it -- if it sucks you'll never hear from me again -- oh wait that's only if its poisonous.

Oh one more thing -- I know you'll read this Jim, how come you have all these pictures of me with these big fish and I don't have any copies yet? **ahem** **cough** Just a computer copy sent will work, gotta brag to the in-laws next week.
