I just made 6 pounds of venicen jerky to take deer hunting and looking at the 100lbs of halibut/red snapper/ling cod in my freezer. I'm looking to do a batch of smoked fish but don't want to guess and wreck some really good fish. I have a big propane smoker and have done turkeys and red meats but haven't tried fish. If someone knows an awesome one I'm all ears.....
I should post my pickled fish recipe but that seems to be an acquired taste.
Come on BIGFISH you Alaskans have to have some good recipes, and forget about the one where you put it under your armpit for one-two weeks.that takes to long.
I like smoked fish. I lived in Washington State as a young kid, and my uncle used to smoke salmon in a smokehouse the size of a small bedroom. It was great. I would like to build a smaller smoker, but for now I use a round one.Recipes are welcome.
