4 boneless skinless salmon fillets cut in to 4"x4" pieces ( lightly salt/pepper)
2 tsp olive oil
2 tsp butter
4 oranges
2 Cloves garlic sliced thin
1/4 cup white wine
In a hot skillet add olive oil and half of the butter. Cook salmon fillets on high heat until brown on both sides.(the key is high heat to brown the outside quickly while just cooking the inside) approx. 2min on first side and 1min on second side. Remove from pan and set aside. Add wine to pan away from flame and return to medium/high heat. Add garlic and squeeze oranges into pan. Let sauce cook for approx 30 seconds add salmon back to pan and cook for an additional 30 seconds turning once to coat. Place salmon on a plate and pour sauce over the top. Serve with rice or whatever side you like.
