Ceviche
Last time I was down in cabo, I caught some sierra thanks to Cuban Fish. So I started making my own version of ceviche.This is what I came up with, and it's awsome.
1 lbs. Sierra or any other fat, oily, tender meat.(shrimp, crab, etc.) cut into small pieces
3 limes
2 lemons
1 orange
small hand full of cilantro diced
2 large very ripe tomatoes chopped
1/2 walla walla onion chopped
2 avacados chopped
1 jalapeno or to taste diced
1 mango chopped
couple teaspoons of garlc powder or fresh
salt and pepper to taste
First cook the meat in the juices(lime, lemon, orange) for 45min-1hr. Then add the rest of the ingredients. DO NOT SQEEZE the juice out of the meat. Let sit for about 30 min. Then you have the best civche I've ever tasted.
Serve with chips and Coronas

That sounds really good. Bluefin works well for ceviche as well.

only time i had ceviche was with Dorado. It was some tasty stuff.

That sounds awesome! I love Ceviche.
Sonics, if you come to the Hook Up BBQ on the 21st and (Nick Velvets' house) you should make some and bring it!!!! Can you make the BBQ? Have you even seen the thread?
Anyway, it sounds good. I would copy the recipe exactly with the exception of the orange and the mango. Though I'm curious to try what it would taste like with them in it.

You can't take out the orange. It balanced the sour flavors of the limes. and the mangos put some sweetness in. Your thinking more of a common ceviche recipe. Mines a ceviche with a twist.

O.K. you guys, I've been meaning to post this:
We all got to try Gene's (Sonics7) special Ceviche recipe at the Hook Up BBQ last weekend, and I will vouch that it's literally the best tasting Ceviche' I've ever had!
I'm definitely gonna store this recipe in my files!
....Make it and don't change a thing. Now he made it with shrimp (which is traditional) but Sierra was the main fish ingredient in this and it was excellent. The likeliness of getting Sierra at the market is not to high, but I would propose that in substitute for Sierra you can use the following for a very similar effect (in order of my personal choices):
*Pacific Whitefish
*Barred Surf Perch
*Yellowtail
*Sculpin
I'm gonna try to make some this weekend with Whitefish.
