The Sushi guys Yellow Tail!

Learned this one a couple of nights ago after getting the sushi chef drunk!

You can get a YT collar or fillet about 1/2 inch thick, salt and pepper it and put it in the oven (open faced: no top/un-covered) or broiler. Cook for about 15 to 30 minutes until done. Take it out and pour some "Ponzu" sauce and little bit of lemon and serve hot. It's the bomb with a little rice and japanese salad. He was hesitant to give me the recipe but after 6 sapporos it was all good. I made it tonight and it was just as good. Try it and enjoy!!

Nice recipe ehano. This is my favorite when I go eat sushi. The call it YT kama they also have salmon kama, but the YT is the best.

Sounds really good but 15 to 30 min in the broiler!!???? That's a long a$$ time to cook fish. Are you sure that long?

Yeah, I still have some YT and cooked some up for dinner, I put it in the oven for 20 - 30 minutes at 350 degrees, it was still juicy and fell off the bone. The sushi chef put it in a broiler for about 15 minutes and it was just as good, the ponzu sauce I got from the chef on Fri, It's the bomb.

you guys are cooking it too much IMO. my yellowtail recepie is a lot simpler and goes like this...

cut the yellowtail into small 2"x2" chunks. Heat up a pan until you season all of the chunks with whatever seasoning you want (a light flavored seasoningis better. i've been using 21 salute seasoning and it gives it a pretty good taste) then very lightly pour some extra virgin olive oil on each side of the YT chunks. put it in the pan until each of the four sides of the chunks become white. voila! when its done, you should still have a very little bit of the middle raw.

Your kinda cooking it like you would cook "Ahi Tuna" (YFT).

One of the big things (as I've mentioned before) that I'm very into and decently skilled at, is my talent in the kitchen; I cook and I cook alot. I'm confussed because I would have never put YT in the broiler for that long. Stranger thngs have happened. I'm gonna try it though... as soon as I get ahold of some tail....Yellowtail that is.
