MY SOY SESAME SALMON(trout) IS NO JOKE
This is a recipe I've used for years for salmon,stealhead, and trout. Its my favorite and I know it will be one of yours. And its simple.
teriyaki marinade
1 cup soy sauce
1/4 cup sugar
1/4 cup brown sugar
3 tblsp. sesame oil
2 tblsp. ginger powder
1 tblsp. garlic powder
1 tblsp. dried chilies
I always make alot of this stuff. I usually buy a half gallon soy sauce and make all of it, it doesn't go bad.
Get about a pound of fish fillets, I leave the skin on. Put them in a zip- loc cover with marinade. Throw it in the fridge For at least an hour. I usually put the marinade on in the morning and cook it for dinner.
Set up the BBQ indirect heat med-high cook for about 20- 30 min depends on thickness.
This marinade is also my favorite on boneless chicken thighs and tri tip. Only grill direct heat. Makes a great sauce.

Awesome Sonic! I'll have to try that out sometimes! Could we replace dried chilies with chili powder?

What'll have to happen is we'll all have to BBQ, you make yours and I'll make mine and we'll have a good 'ol time. Recipe sounds fabulous. I'm definitely gonna try it!
(Check out my recipe here in the Recipe section called "Creole Barracuda" it's in here somewhere, I think you'll like it. Most people say, "I really never took the time to prepare Barracuda", and most people don't, but if done right it's delicious!)

Tony your creole Baracuda sounds good, but I've never caught a baracuda to try it. What do they taste like? Try mine, just make alot of it cause you can use it for almost any kind of meat., and you can store it if you don't use it all. My favorite is trout w/ the marinade, but instead of just grill'n it throw some wood chips in. Indirect heat low for atleast an hour. I'm making myself hungry. Somebody bring me some trout.

We'll both have to cook our recipes and have a big HUSF.com get together. I want people to try mine; I'm gonna definitely try yours, but I think I'm gonna do yours with Halibut first.
The 'Cuda steaks taste great. The bigger the cuda the better. Not because it's more meat, but because the more mature barracuda meat seems to fillet more like a Steak (like Tuna or shark) than it does a regular fillet (halibut, trout, snapper, etc, etc.) I don't care too much for Barracuda by itself, but with a good recipe, barracuda is great table fare!

lol LocalRookie got me playing Poker at pokerstars.net and that is the only reason ive been staying so late. jstcrzyengh is up that late too but he only posts to argue with people

I tried this tonight and it was awesome!!! You were totally right about cooking it on indirect heat too. The only thing I left out was the ginger powder since I didn't have any, but it worked out really well. Great recipe!
