Dark meat fish
This recipe is best for dark meat fish Tuna, Bonita, and yellowtail.
Cut the filets in 1-2 in strips. (Remove all of the blood line meat)
Brown the edges of the filets lightly in a large frying pan with butter.
Pour salsa over the top of them and let it cook till most liquid from the salsa is gone.
Then serve.
I would make this on the boat and it was always a big hit. And it is very easy.
