I've only tried beer-battered recipes for catfish. They're good, but could use some slight improvements. I haven't tried this recipe yet. It's a regular batter catfish. I think it should be ok for halibut:
3/4 cup of yellow cornmeal
1/4 cup of flour
2 tspn of salt
1/4 tspn of cayenne(sp?) pepper
1/4 tspn of garlic powder
4 catfish fillets (halibut)
vegetable oil

mix cornmeal, flour, salt, pepper, and garlic.
Cover fish with mixture. (As I'm writing this, I'm thinking of dipping the fillets in eggs first. It's not in the recipe, but it should stick better to the batter.)
Fry fish until golden brown.

Hope this helps, if it doesn't, the check out www.justseafoodrecipes.com and hopefully, they'll have one that's better.

TK Austin,

When you finally find the recipe you're looking for; please let me know, I've been looking for a really good batter recipe for the same reason............."Fish -n- Chips"!!!! Halibut should be awesome for that, actually Pacific Whitefish would be really awesome too!

Ain't it though! Man I've got a recipe that is all mine, for PWF, that I'm reluctant to share...though I think that would be selfish of me. It's called "Buttered WhiteFish". It's really simple, but it's out of theis world!! I'll have to do a new thread on it so you guys can try it out! I couldn't keep anythang from my brotha's here at HUSF.com!!!!!!!!!

The best batter for fish'n chips is tepura batter mixed with beer, it's the best. Hands down. Try it with ponzu. Way better than tarter sauce.
