Hey I have one for you....
Hey Dodo,
You want a recipe.... Here you go....
Good Fish Marinade:
3 Cup's White Wine (Dry)
1 Cup Extra Virgin Olive Oil
1 juice of one Lemon, no seeds
1/2 Bunch of Cilantro (Fine Chop)
3 Large Garlic Cloves, (Fine Chop)
1 Tbsp Sea Salt
1 Tbsp Pepper
This is a good recipe.... I use it at the restaurant, Remember I am a Professional Chef.....
Let me know what you think...

Whats the correct procedure for properly bleeding a yellow fin? Is it the same as how you would do big cats by scoring around the tail and breaking it off by snapping the spine? If anyone else has fish prep ideas or hints besides "ice it immediatly" (LOL) would love to here them.

from the past longranging;
best to get under the gills and cut the vessel off.
after draining the blood, soak in ice water w/ alot of ice.
some longrange boats have what its call REFRIGERATED SALT WATER HOLD. ( R.S.W.)
A WHOLE LOT BETTER THEN BRINE.
