How do you grill your fish???

So I'm about to grill some striper I caught a while back on a good old fashion weber and was wondering what you folks use to grill your fish? Ovens are for children.

apple wood is a bit sweeter.

what i like to do is:

cut fish into fillets
add olive oil, spices , and wrapp into foil.
i let the fire dye down some, not to hot.
i let the smoke do all the work..........

I think the only way to grill fish, is with a lot of beer, and at someones else house, with them doing the work.

How does the smoke work, if the fish is wraped in foil.

hot smoke penetrates through lightly wrapped foil.

DO NOT TIGHT,N THE FOIL. AND A FEW SMALL HOLES WILL HELP.

If I want smoked fish, then I smoke them, If I want BBQ fish, I BBQ them. I Like to smoke, small carp, Salmon, Tuna, and Bonito, over a real fire, not gas. Mesquite is to Strong for most delicate fishes. Why would you BBQ a good fish with Mesquite. You might as we'll cook a two by four, it'll taste about the same. Of course if you are on your second six pack, then it's OK to use any wood that is at hand.

when grilling albacor i coat the fillet with mayo (sounds wierd but it all burns off) after puting salt, pepper, and garlic chips on it. grill each side according to thickness. you should onley have to flip it once. the mayo keeps the moisture in and adds a good flavor.

i really like a 3/4 alder and 1/4 apple when smoking fish

Last night I cooked up some striper with pre soaked flammable coal on the grill. Well I didn't know it was presoaked nor did I examine the bag to see the caution label on the side they said "DONT USE WITH A CHIMNEY STARTER"..........let's just say cooking with slice is always a funner and more explosive time. Damn coals blew like an IED and made a crater in the concrete, f@cking awesome!!!! KIDS STAY IN SCHOOL
