good question, I talked to folks a few months ago about the best way to cook perch and they all recommended pan-frying it. Perch are extremely moist fish, so much so, they come out like mush if you bake em. frying seems like the best method to loose the moisture from the meat.
I've also been told that the best way to eat grunions is to oil fry them like frys. Chicken fries, animals fries, grunions frys.......mm,mm,mm I'm lovin it.
