Talking need help bad

First let me tell you about me, I live in Zihuatanejo, 150 miles north of Acapulco.
I have lived here all my life and have gone fishing since I was a kid.
I fish by hand, I caught an 80lb sailfish by hand, real nice experience.
I just bought my first spinning reel combo, Penn 4500SS for small fishing.

People here us big reels for big game fishing, Marlin, sailfish, big yellow fin tuna (300lb), and they dont use lighter reels. and they troll mostly all the time
I want to buy a small casting trolling reel, for wahoo, mahi mahi, jacks, mackarel. no more than 55lb fish.
what would you recommend? I want to buy a combo, either Penn or Shimano.
and I have lots of questions.
I havent cast before, and I also read that is for more advanced fishermen, well guess what, I dont care, I will practice as long as it takes until I get it mastered, I have read a lot about birds nest and those things.
Sooner or later I will be able to cast.
Here are my questions

1.- is there a diference with levelwind and no-levelwind for casting?
2.- for the above fish I mentioned, what would be best level or no level?
3.- I have used Penn 99% of the time and they are real good and lasting reels.
4.- between Penn 525 mag and 310GTi series what would be better or what other you recommend?, one has levelwind and other doesnt
5.- what tipe of line for the above fish would you recomend, we use mm for the fishing line and I would buy good line in the US.
6.- I reel with my right hand, are those reels for me? are mostly casting reels reeled by right hand?

I thank you very much for your help. I will need as much info as possible so I can buy my new fishing rod and try it.
I leave tomorrow for snook, and snapper fishing, wish me luck (fishing by hand)
